Thai Fried Duck Eggs | Street Food with Senpai Kai

On this episode of Street Food with Senpai Kai, Kai whips up some Fried Duck Eggs from Thailand!

Ingredients:
- 12 eggs
- 2-3 shallots (sliced thin, but not too thin)
- 8-10 cloves garlic (sliced thin)
- 4-8 dried red chiles (arbols)
- Large pot of oil for frying
- Cornstarch, as needed
- 2tbs palm sugar
- 1tbs fish sauce
- 3tbs tamarind extract
- Small bunch of thai basil, mint, and cilantro (most of it is for decorating the platter)

Method:
1. For the eggs, bring a pot of water to a boil with a dash of baking soda (for easy peeling)
2. Gently lay the eggs in and boil for 7 minutes.
3. Transfer to a boil with cold water (does not have to be iced!).
4. The eggs are easier to peel, the warmer they are. Just don’t burn your hands!!
5. Set aside on a plate/tray lined with paper towels to absorb the moisture.
6. For the fried shallots, slice them fairly thin on a mandoline, then toss in a light amount of cornstarch.
7. Set aside for 30 minutes, and it will develop a thin coating that gets much crispier.
8. Fry at 300 until golden brown and most of the bubbles have evaporated.
9. Drain, salt and set aside.
10. For the garlic chips, slice thin on a mandoline (BE CAREFUL)
11. Cover all the garlic in cold water, a splash of vinegar, then bring to a boil and simmer for 5 minutes
12. Allow to cool before frying at 275-300, until it’s light golden brown.
13. Drain, salt and set aside
14. Fry the chilis in the same oil at 325-350, for 1-2 minutes, until very darkened in color and puffed up.
15. Fry the peeled eggs in the same oil at 350 until golden and leathery, 2-3 minutes
16. Set aside to cool, then cut in half and place on a platter lined with thai basil, cilantro and mint.
17. Salt the eggs!
18. For the tamarind sauce, bring the palm sugar, tamarind extract to a boil.
19. Add the fish sauce and return to a boil, then set aside.
20. Pour that over the eggs, fairly liberally.
21. Then garnish with basil, cilantro and crispy shallots, garlic chips.
22. If you can find edible flowers, they give very nice color!
